July Monthly Colour Challenge Block

Jen from Patterns by Jen does this fun colour challenge each month of the year and this month I am joining in! Jen provides the instructions on how to create the block on her blog post…. so head on over there each month!

Each month Jen decides on a colour (this month is LIME!) and this year each month has a food / recipe theme : ) What fun! These are the fabrics I pulled from Tula Pink’s True Colours range

And here is my version of the July block!

And purchasing some limes to do this photo shoot, I was reminded of this Thai green curry recipe that a friend taught me oh so many years ago now…. and it is a family favourite!

 Thai Chicken Curry Style: Thai
Can be red or green curry paste. Serves 4.  
Ingredients
2 cans light coconut milk
1 teaspoon green or red curry paste
1 potato cubed
handful of beans or cabbage or cauliflower
1 carrot diced
3 kaffir lime leaves or 1 lime (or squeeze the lime juice in near the end)
1 tomato
1 spanish red onion
1/2 teaspoon salt
1/2 teaspoon sugar
2 tablespoons fish sauce
1 chicken breast, cubed
Method

1. Heat coconut milk and curry paste in frypan.

2. Bring to the boil and add vegetables, adding the tomato last.

3. Add seasonings and then add chicken

4. Keep boiling rapidly during whole process.

5. Serve with fragrant rice, and a squeeze of fresh lime over the top.

And of course, a lime goes well in many alcoholic drinks!

  • Anne, I love the fabrics you used in your block. That cut lime looks so refreshing!! The curry sounds good to me, but alas, I have a picky eater and he wouldn’t come near it! I’m glad your family enjoys it! Thanks for sharing!

      Thanks Brenda! Lime colours were a bit of a stretch for me… but these Tula fabrics were just perfect!
